The old
days. Still on the counter.

A working farm and shop run by the third generation of the Webster family. We rear our own beef, hang it the way it used to be hung, and cut it for you the morning you walk in.

From Field to Fork

From cereal in the field
to dinner on the table.

Four steps from the field next door to your kitchen — no middlemen, no long lorry rides, no question marks about where it came from.

01

Cereals

We grow the cereals on our farm in Lathom that feed our cattle. Limousin, Charolais and Belgian Blue X.

02

Reared

Reared on the farm. Steve's been our head butcher since 2005 — he picks every animal he cuts.

03

Hung

Hung on the bone in the dry-ager out the back of the shop. Patience is the recipe.

04

Counter

Cut at our counter the morning you walk in. Ask for cooking instructions — there are cards by the till.

The old ways

Traditions worth keeping.

No.01 · The old ways

Hung on the bone.

Most beef on a supermarket shelf has been wet-aged in a vacuum bag for a fortnight. Ours hangs on the bone in the dry-ager out the back for 28 days. It loses weight; it gains flavour. The old way; the right way.

No.02 · The old ways

Cut to order.

Steve doesn't pre-pack anything. Tell him what you're cooking and how many you're feeding — he'll cut it for you while you wait. There's a card on the wall with cooking times if you want one.

No.03 · The old ways

Reared on what we grow.

Our cattle eat cereals grown in the field next door. No imported feed; no long lorry rides. We can point at the field they came from. Limousin, Charolais and Belgian Blue X — the way we have done since 1987.

No.04 · The old ways

Family, three deep.

Roger's father retired in 1987. Roger and Bernie built the shop. Andrew and Joe run it day-to-day now. The same farm, the same stone barn, the same name above the door for over a hundred years.

No.05 · The old ways

The neighbours, not the wholesalers.

Mushrooms from the Owens at Scarisbrick. Cabbage from a field in Ormskirk. Cheeses from the dairies at Goosnargh and Procters. We try not to drive far for any of it.

Awards & accreditations

Twice voted Butcher's
Shop of the Year.

We don't shout about it often, but the rosettes go up on the wall and stay there. Here's the proof in dispatches.
